Two Questions

First, I have been going crazy today trying to remember the source of a quote that's stuck in my head. It is something along the lines of, "And after all, it's never very difficult to find a man to do a bad thing." I'm sure I should know it, but I can't access the information. Does anyone here recognize it?


Second, does anyone have some good ideas for how to fix asperagus? Through no fault of my own I ended up buying two pounds of it at the Farmer's Market on Saturday (it's a long story, 'k?) and though I've managed to eat one pound so far (roasted with olive oil, salt and freshly ground black pepper) I'm trying to think of something different to do with it.

Don't suggest simply steaming it and slathering it with butter; I'm not all that fond of asparagus and that's a preparation that doesn't excite me. (In asparagus's defense, I'll note that at least I consider it edible--unlike beets, which I detest with a passion. Which is a shame, because Swiss Chard is such a pretty plant.)

Can you make a basic cheese sauce? Cheese and asparagus go really well together, for some reason.

Asparagus is good steamed and tossed with pasta, olive oil, and parmesan cheese... or how about a quiche? Roasted asparagus and red peppers might go nicely in a flan.

No idea on the quote, I'm afraid!
